Will you be in downtown Seattle this Thanksgiving? If you’re looking for a place to have your Thanksgiving meal, Urbane at the Hyatt at Olive 8 has a seat for you.
Led by Chef Nate Parnell, new to Urbane and to Seattle as of this summer, the culinary team at Urbane put together a menu full of inventive dishes for this year’s Thanksgiving feast. Starters include Dungeness crab cakes with shoestring potatoes, apple coleslaw & tartar sauce; and pork belly with peanut butter mousse and espresso crumble.
There are plenty of hearty sides, including glazed carrots, rich cranberry sauce, Thomas Kemper root beer glazed sweet potatoes, green beans with foraged mushrooms and crispy Walla Walla onions, honey cornbread dressing and charred scallion mashed Yukon potatoes - which have been given the Seattle treatment by Chef Nate with the addition of cream cheese and are to die for!
The Urbane Thanksgiving turkey is a unique take, brined to perfection with lavender and molasses.
Don’t forget to taste from the decadent dessert menu, which includes pumpkin pie cheesecake and pecan pie; and the holiday drinks from the bar (the Eggnog Delight, Red Suit, Winter Manhattan, Peartridge, and Urbane Butter Rum) and the espresso bar, which features one of Seattle’s finest, Victrola coffee (near & dear to my heart as Victrola is where Jacob & I had our first date!)
